Dig Acres is our 20 acre farm located in Chester, NY. Dig Acres was established in 2017 to provide our chefs with opportunities to more closely connect with the produce they use in our recipes, test new ingredients for our changing menus, and train the next generation of farmers.

Dig Acres is located in the Black Dirt region of New York - a uniquely fertile soil found in few other places in the country. The farm grows a diverse array of vegetables that are primarily used in DIG’s kitchen, but are also sold to other wholesale accounts that focus on high quality, local produce. The farm was certified organic in 2022, though it has been committed to growing using organic standards since its inception.

Dig Acres runs a farm business incubator program as part of its core mission of uplifting young and new farmers. This program provides participants with an acre of land, farm equipment, infrastructure, financial support, mentoring, and access to DIG’s supply chain. The Incubator program creates a pathway for aspiring farmers to operate sustainable, financially viable farm businesses.
