These pancakes are a fluffy and delicious alternative to the traditional version, and more nutritious to boot. A surefire hit with kids and adults alike.


½ tsp ground cinnamon

4 cracks of ground nutmeg

1 tsp sea salt

1 ¾ cup all purpose flour

1 tsp baking powder

1 large sweet potato, cooked and mashed (about ¾ cup)

2 eggs, whisked

1 ¾ cup buttermilk

1 tsp vanilla extract

½ orange, zest


1. Whisk together cinnamon, nutmeg, salt, flour, and baking powder. Reserve.

2. In a medium mixing bowl, combine mashed sweet potato, eggs, buttermilk, vanilla, and orange zest. Whisk together.

4. Stir the dry ingredients into the wet ingredients just until mixed.

5. Spoon the batter into a buttered non-stick pan over medium to medium low heat, browning on both sides, approximately 2-3 minutes per side.
