Herbs and cheese, but make it saucy! Drizzle on leftover veggies, add to an omelet, fold it into a broth, or all of the above- pesto adds a big pop of flavor and nuttiness to any meal.


4 cups kale, roughly chopped

2 cups basil or a mix of any other herbs you have on hand

¼ cup walnuts, toasted

¼ cup parmesan cheese, grated

1 each lemon, zested

½ cup extra virgin olive oil

1 tsp sea salt


1. Combine toasted walnuts and lemon zest in a food processor. Blend until the walnuts are processed into small pieces.

2. Add kale, basil or mixed herbs, and grated parmesan. Pulse to combine.

3. With the motor running, stream in olive oil. Season with sea salt.
