INGREDIENTS

2 cups broccoli florets

1 each avocado

⅓ cup yogurt or coconut yogurt

1 tbsp tarragon

½ cup basil

1 each scallion, sliced

1 tbsp coconut aminos

½ each lemon, zest

1 ½ tsp salt

METHOD

1. Bring seasoned water to a boil. Blanch broccoli florets until tender, approximately 2 minutes. Immediately shock in ice water, and chill completely.

2. Drain blanched broccoli florets, then chop into small pieces.

3. In the food processor, combine chopped broccoli with avocado, yogurt or coconut yogurt, herbs, scallion, and coconut aminos. Process until smooth.

4. Season with lemon zest and sea salt. Serve chilled.
