Grow it, chop it, cook it, and serve it. Try and keep it local. We shun the world of processed and industrialized food.
All of our meat comes from animals that are raised humanely, without the use of hormones and antibiotics. In searching for fresh, delicious produce, we have learned that organic isn’t always possible or even optimal. We focus on working with local, sustainable farms and recognize that sometimes farmers have to use certain pesticides and fertilizers to protect their crops and keep their farms running. But we spend the time to visit these folks and understand why they do what they do, and how they do it. Some embrace organic, others IPM (Integrated Pest Management), and yet others are forced to practice conventional methods.
The decisions and trade-offs that we make are at the core of creating quality, seasonal, affordable dishes, and we make them on a case-by-case basis with every ingredient we buy. Not every company will share them with you. At Dig Inn, we are proud of the choices we make, and we think it’s important to talk about them with candor. We believe that through honesty and home-cooking we can help to create a healthier community - even in a city of millions.
